Inspector's notes

Observed rice in the steam table at 103-128*F, chicken in the tall hot holding unit at 108*F, and brisket in the tall hot holding unit at 115-122*F. Per PIC, the food was placed into the units around 10:15-10:30am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The food was placed into the smoker to reheat and temped at >165*F by inspector. Corrective Action: Corrected at time of inspection.
