Observed raw fish, shrimp, chicken, pork, and beef with internal temperature between 47F - 51F in the display cooler. The person in charge stated the meats had been bought out from the walk-in cooler and placed into the display cooler less than 4 hours ago. The person in charge stated the sliding cooler doors had been removed for cleaning less than an hour ago and adjusted the temperature setting for the display cooler. Observed the ambient internal temperature of the display drop to 38F - 41F. Discussed operating display cooler to maintain TCS cold holding temperature of 41F or less.
