Inspector's notes

Observed cooked steak, cooked chicken, cooked meat pastries, cooked pork with internal temperatures between 105F-125F in containers stored outside the heating wells of the hot holding station. Observed the number of food items were being held at the hot station exceeded the number of hot wells and greatly the capacity of the hot table. Discussed utilizing equipment with sufficient capacity or reducing the number of containers placed for hot holding to only the number of wells available to maintain proper hot holding. The person in charge stated the food items had been cooked and placed at the hot station 3 hours before and moved all items to be reheated to internal temperature 165F or higher.

The food items were in metal containers that were not inside the wells for the hot holding case. The hot holding case did not have a heat lamp and only produced heat from the bottom inside the opening for the wells. The person in charge stated the food items had been cooked and placed into the hot holding case 30 mins ago and reheated the items to 165F.
