Observed chicken wings in walk in cooler in deep depth container at 70*F. As per the owner, the wings were cooked approximately 2 hours prior to the inspection.

3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Wings were separated into smaller containers an placed in freezer to quickly cool to 70*F within the two hour process, and then cooled to 41*F within an additional 4 hours Corrective Action: Corrected at time of inspection.
