Observed walk in cooler with an ambient temperature of 46.9*F with max/min thermometer. Equipment must be at a temperature that can keep food at 41*F of lower. Temperature will blow into unit at 42 - 44*F and then increase to 48-50*F using infrared thermometer. Max Min Thermometer would only drop to 45.3*F As per the person in charge the store completed inventory and prep work earlier in the day since business in scheduled closed the day before. Temperature control for safety foods including but not limited to sprouts, raw meats (pork, chicken, eggs, milk, cooked pork placed in other reach in coolers and freezers on site. Reinspection to be completed within 24 hours to verify equipment can hold food at 41*F or lower. Corrective Action: Correct prior to re-inspection.
