Inspector's notes
Observed diced tomato, pico de gallo, sour cream, and a cream cheese mixture in the top of the left side cold holding unit with internal temperatures ranging from 46*F-50*F. The ambient air temperature of the unit was 40.2*F, measure using min/max thermometer. PIC stated that the products were left in the cold holding unit overnight. Informed PIC that due to their time in the machine being over four hours these products need to be discarded. PIC discarded the improperly cold held items at time if inspection. Items were embargoed. PIC made as service call for the unit to check that it is functioning properly at time of inspection. PIC agreed to not use the top of the unit for TCS products until it can hold them at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the establishment non-continuously cooking chicken and beef. Informed PIC that non-continuous cooking requires prior department approval. Informed PIC that they will need to submit written procedures for each raw animal protein that is non-continuously cooked and once approved will need to keep a log for each item. Provided PIC with non-continuous cooking documents via email. Informed PIC that noncontinuous cooking cannot occur until they have received approval from the department. Informed PIC that all non-continuously cooked beef and chicken on hand, needs to be cooked fully. All beef and chicken were cooked fully at time of inspection. Non-continuous cooking of raw animal proteins requires prior approval of written procedures by department. Corrective Action: Corrected at time of inspection.
