For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling.>>>Observed the following time/temperature controlled for safety foods prepared at the following times with the following internal temperatures: cooked masala onion gravy (9am; 66*F), cooked green beans and potatoes (11 am; 114*F), cooked daal (11 am; 76*F), cooked chick peas (1 pm; 109*F), cooked chicken meatballs (1pm; 112*F), and cooked rice/biriyani rice (1 pm; 75*F - 90*F). All of these foods were observed sitting at room temperature in metal pots except for the onion gravy that was in a deep soup pot in a reach in refrigerator. Person in charge indicated they were not holding these foods as apart of a time as a public health control policy. Person in charge was informed that time/temperature controlled for safety foods must be cooled from 135*F to 70*F in 2 hours and from 70*F to 41*F in 4 hours. Person in charge willingly discarded of the cooked masala onion gravy, cooked green beans and potatoes, and the cooked daal because they did not cool from 135*F to 70*F within a 2 hours time frame. Cooked chick peas, cooked chicken meatballs, and cooked rice/biriyani rice were reheated to 165*F and the person in charge indicated they would cool these foods down to 41*F using methods depicted in the cooling guidance provided and under refrigeration.
