Observed wet wiping cloths stored in the dry sanitizer bin. Informed PIC that all wet wiping cloths need to be stored in an approved sanitizer concentration. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Correct prior to next routine inspection.

PIC stated that this area is used for events and banquets. All food is prepared in the main ballroom kitchen and brought to the establishment when there is an event.
Inspector's notes
Observed a few ceiling tiles missing in the kitchen. Discussed replacing the tiles with PIC so that the area is smooth and easily cleanable. Observed the tile panel of the wall-floor joint breaking away from the wall, creating a large gap. Informed PIC that the tiles need to be replaced or repaired in a way that it is smooth and easily cleanable. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Physical facility must be maintained in good repair at all times. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
