Observed tongs stored in warm water bath on the grill. Water bath was double panned and the water measured at 98*F. Discussed keeping water bath in one pan directly on the grill to ensure that the water is >135*F. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. Corrective Action: Correct prior to next routine inspection.

Observed cooked beets with an internal temperature of 48*F and gravy with an internal temperature of 55*F in the cooling process both with lids on at time of inspection. Per person in charge the food items were an hour prior into the cooling process. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
