Inspector's notes
Butter, raw cheese, vegenaise, and soy cream cheese with internal temperatures between 52 degrees F and 54 degrees F were cold holding in a walk-in cooler. Ambient temperature of the walk-in cooler was 55.5 degrees F using a min/max thermometer. PIC stated that the temperature of the cooler has been above 41 degrees longer than 4 hours. PIC discarded all TCS products. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Butter, raw cheese, vegenaise, and soy cream cheese with internal temperatures between 52 degrees F and 54 degrees F were cold holding in a walk-in cooler. Ambient temperature of the walk-in cooler was 55.5 degrees F using a min/max thermometer. PIC stated that a repairman will be called to repair the walk-in cooler. Establishment has minimal TCS products and will not accept deliveries until the cooler has been repaired. Establishment has sufficient cooler capacities to operate safely until walk-in is repaired. A reinspection will occur on or before 8/1/2025 to verify that the walk-in cooler has been repaired and is holding ambient temperature below 41 degrees F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection.
