Large, deep plastic container of steamed chicken found covered in walk-in cooler at an internal temperature of 105*F - 110*F in center. Per PIC, chicken was placed in walk-in cooler an hour. Trays were placed on shelves and speed rack in walk in cooler. PIC routinely monitored internal temperature of product with probe thermometer to assure product properly cooled down within proper cooling time and temperature requirements at time of inspection.
