Observed tomato sauce that was taken out of a can at ambient temperature, cooling in large containers with a temperature of 56F. The PIC indicated that the tomato sauce was put in the can 2 hours prior to inspection. All TCS food must be stored in a manner that allows for adequate cooling of product down to 41F. The PIC placed the large containers over ice and are stirring frequently to bring down the product to 41F. Correct By: Corrected At Time Of Inspection

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage Observed a knife used to cut tomatoes stored on the top of the prep table in ambient air. The PIC indicated that the tomato was used 40 mins prior to inspection. Utensils that is used for TCS food cannot be left sitting out or in an unprotected location without being washed and sanitized first. The PIC took the knife to the dishwasher to be cleaned.
