Observed dishes at the clean dishes storage area. Upon separating some metal bowls, one of them was observed to have some dried food residue in several placed in the bowl. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Discussed with person in charge that all food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

The food items were raised on tinfoil for display instead of laying within the steam table. Discussed proper food storage for steam tables. The temperature setting on the steam table was raised. The Person in Charge (PIC) stated the food had been in this case for less than 1 hour, so the items were reheated to 165°F. Thermometer was calibrated on site. PIC notified a repair technician to service the unit at time of inspection and they will be on site tomorrow morning. Establishment had adequate refrigeration to maintain operations. Reviewed cold holding equipment requirements with the PIC. No TCS foods can be stored in the walk-in until after the re-inspection. Re-inspection will be conducted within 48 hours to verify that the unit is holding at or below 41°F. Correct By: Correct Prior To Reinspection
