Thermometer was calibrated on site. Per person in charge (PIC), the beef was delivered about 2 hours prior and was moved into a reach in freezer at time of inspection to facilitate rapid cooling. Thermometer was calibrated on site. PIC notified a repair technician to service the unit at time of inspection and they will be on site tomorrow morning. Establishment had adequate refrigeration to maintain operations. Reviewed cold holding equipment requirements with the PIC. No TCS foods can be stored in the walk-in until after the re-inspection. Re-inspection will be conducted within 48 hours to verify that the unit is holding at or below 41°F. Correct By: Correct Prior To Reinspection
