Inspector's notes

Buttered corn in hot holding steam unit is at 110 degrees F for more than 2 hours. PIC stated this food item is in the package and must be reheated in hot water to 160 degrees F and then transferred to holding unit. PIC discarded the food item and placed a packaged food item in hot water well that was reheated to 165 degrees F and transferred that to hot holding steam.
