Inspector's notes
Sliced tomatoes in walk-in found with internal temperature of 48-50*F at 10:40 AM. PIC stated the tomatoes were cut at 6:40 AM today. A truck delivery arrived shortly before the tomatoes were cut and placed in the walk-in. The door to the walk-in was left ajar during the unloading of the truck, which finished around 8:30 AM. The ambient temperature of the cooler had rose during the time the truck was being unloaded which slowed the cooling process for the tomatoes. PIC discarded the tomatoes. Please ensure cooling TCS food times meet required time frames and temperatures. Corrective Action: Corrected at time of inspection.
