#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed small containers of cooked sausage, bacon, and eggs in hot holding unit with internal temperatures ranging between 118°F and 125°F. Per manager, items were cooked/reheated and placed in unit about 30-45 min prior. Manager instructed staff to reheat items and adjusted the temperature on the hot holding unit. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Discussed regularly checking hot held food items to ensure a temperature of 135°F or above is maintained. Corrective Action: Corrected at time of inspection.
