Observed re-packaged salsa containers with "keep refrigerated" on main container held in a prep table top at 48°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Salsa containers improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed the downstairs automatic dispenser hooked up to sink and surface without sink and surface test strips available. Upon further questioning, it was determined that the wrong sanitizer had been sent to the location. The employee stated they intended to have the Quat, which was right next to the sink and surface bottle, hooked up to the automatic dispenser. After attempting to hook up the correct sanitizer (quat) to the automatic dispenser, it was dispensing under the recommended use range (150-400 PPM). Staff had bleach and chlorine test strips onsite and plan to switch to hand dosing bleach until they can have the unit serviced by their third-party contractor. Corrective Action: Corrected at time of inspection.
