Per person in charge (PIC), pizza sauce was prepared from ambient ingredients from the previous day. TCS pizza sauce was discarded at the time of inspection. Inspector's notes

Observed previously canned olives 49-51*F, peeled hardboiled eggs 47*F, deli meat 56*F, feta cheese 55*F, cooked chicken wings 51*F, raw fish 54*F, baby spinach 60*F, lettuce 62*F, cut tomato 50*F in prep table on the cookline. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC the prep table was stocked around 11am, 3 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Consecutive repeat: 2nd. Corrective Action: Corrected at time of inspection.

TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC removed large container of pasta sauce and placed the container in an ice bath at the time of inspection. Corrective Action: Corrected at time of inspection.
