Observed a bin of marinated raw beef and a package of raw chicken on a shelf above single packed salsas and Fanta sodas. Alerted staff who moved the raw meats to the bottom shelf at time of inspection. No direct contamination was observed. All raw animal proteins must always be stored below RTE foods and stored according to cooking temperature to prevent cross contamination. Per person in charge the beans were prepared the previous day and placed in the refrigerator where it has been since last night. All other food items in the walk in refrigerator were observed at 41 degrees Fahrenheit or below. All food must be cooled to 41degrees Fahrenheit within 6 hours total time. Advised staff to check any items prepared the night before to be 41*F using a metal stem thermometer. Provided some electronic information for cooling in Spanish to establishment.
