Do not use the coolers for TCS foods until they can hold foods below 41°F. Emailed a list of hard cheeses from the 2017 FDA Food Code with this report. Predefined Comment: Upon re-inspection, all violations due for correction have been corrected.

Inspector's notes

The circular grab-and-go case had an air temperature of 50°F. Marsacopone cheese was at 44F. Foods were moved to the kitchen walk-in cooler to cool. Standing grab-and-go cases held 45- 43.5°F. Tiramisu, meatballs, and sauces were held at 46°F. Foods were moved to the walk-in cooler to cool. Tomato and cream sauces in the box meals held 51°F. These meals were embargoed. The temperature of the standing coolers dropped when the coolers were covered.

Inspector's notes

The grab-and-go case was holding crema pasta sauce and marscopne cheese at 46F. All foods were removed from this case. This case was holding at 43F. A separate grab-and-go case was holding pasta sauces at 46F-48F on the bottom level. The other levels was holding foods at 43F. The air temperature measured at 50F using a min/max theremometer. Manager provided temperature logs for when the temperature of the case was taken at 8 AM.
