Small reach-in refrigerators near fryers with an ambient temperature of 50*F. Person in charge to place a work order, put out of order sign, and continue to hold foods in neigboring units at 41*F. No foods to be held in unit until unit can hold an ambient temperature of 41*F or below. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Corrective Action: Correct prior to next routine inspection. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

There is hot water available in the establishment. A handwashing sink shall be equipped to provide water at a temperature of at least 100*F. The other hand washing sink (near dish machine) gets too hot for employees to properly wash hands. Please repair fixture prior to the re-inspection within 10 business days. PIC replaced the cutter with a clean one at time of inspection and stored it properly. Advised person in charge (PIC) that non-food contact equipment which hold containers of food and utensils must be maintained clean, and does not contaminate foods/utensils stored on wire rack shelves.
