PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals ----- Quat sanitizer wiping cloth buckets had a quat concentration well above 400ppm. It was determined that the quat dispenser at the 3 compartment sink was dispensing too strong of a sanitizer solution. Establishment had quat test strips available and easily accessible. PIC re-made all sanitizer buckets with a 50/50 solution (50% solution from dispenser and 50% tap water) and it yielded a concentration around 300ppm. PIC stated they will place a work order to get quat dispenser calibrated. Please ensure quat sanitizer is maintained at 200-400ppm using test strips. Correct By: Corrected At Time Of Inspection
