Observed cooking oil spilled on the ground behind the fryers in the deli. Per PIC they have put in a work order for the fryer, the leak being caused by a broken gasket near the drain pipe. Educated PIC that the physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. Cooked chicken with an internal temperature between 109 degrees F and 122 degrees F hot holding in the steam table at the deli counter. Cooked boneless wings with internal temperatures between 112 degrees F and 129 degrees F hot holding in the wing bar steam table. Manager stated that the chicken was placed into the steam tables less than 30 minutes prior. Manager verified from the temperature log that both cooked chicken and cooked boneless wings reached a cooking/reheating temperature of at least 165 degrees F before being placed into the steam tables. The cooked chicken and the cooked boneless wings were removed from the steam tables and reheated to 165 degrees F. Ensure all hot holding TCS items are held at a temperature of at least 135 degrees F or above. Correct By: Corrected At Time Of Inspection
