Mechanical ware washing machine in back of establishment was reading a chlorine concentration of 0ppm. Informed PIC, who replaced the bottle of sanitizer feeding into the machine. Tested the sanitizer again and the concentration read between 50-100ppm on surface of utensil. Ensure sanitizer concentration is tested periodically to ensure proper concentration is reached to sanitize equipment. :

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment --Ambient air temperature of both line refrigerators measured 46°F and 48°F per min max thermometer. All time/temperature control for safety (TCS) food items measured internal temperatures at or below 41°F. Due to cold holding violations noted in the past, it was strongly recommended to have these units replaced.
