Observed fully thawed octopus and imitation crab in the walk-in cooler in the manufacturer's sealed original reduced oxygen packaging (ROP). The packages were labeled "keep frozen." ROP fish labeled "keep frozen" must be removed from the packaging to thaw under refrigeration or thawed under running cold water and removed from the packaging immediately after thawing. Person in charge (PIC) removed the products from ROP during the inspection to correct. Corrective Action: Corrected at time of inspection.

Observed cooked chicken in a steam table measured at 120F. PIC reported cooking and placing in steam table 10 minutes prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. PIC increased water level and settings on steam table to maintain hot holding temperature of 135F or higher. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
