Observed prep refrigerator #2 measuring with an ambient temperature of 51 degrees F. TCS items such as sauces, chili, and diced tomatoes were recommended for discard. These items measured with internal temperatures ranging between 49-51 degrees. See embargo list for details. Discussed using temperature logs to indicate next step of action. For instance, temperature log noted the refrigerator measuring at 48 degrees this morning. All food should have been discarded and removed at that time. Prep refrigerator not required for flow of business. Do not store TCS food items in refrigerator until in good repair and able to maintain temperatures at or below 41 degrees F. 3rd consecutive violation. AMC class scheduled for 1/22/25
