Inspector's notes
Observed beverage cooler near the drive-thru window storing salsa in to-go cups. The cooler measured with an ambient temperature of 5 degrees F. The red and green salsas measured with an internal temperature of 60 degrees F. The salsas were placed in the cooler approximately 2 hours ago and were placed in the walk-in refrigerator for rapid cooling. Discussed cold holding. The beverage cooler will not be used to store TCS food items until in good repair. The establishment can operate safely without the use of this cooler.

Observed tartar sauce with an internal temperature of 48-49 degrees Fahrenheit in a prep refrigerator. Per PIC tartar sauce had been inside the prep refrigerator for more than 4 hours and was recommended for discard.
