Observed a group (5-10) of flies near the bar area and near the back door. Person in charge states they will request a pest service as soon as possible. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Reinspection will be conducted within 10 days. Corrective Action: Correct prior to re-inspection.

Inspector's notes

Observed guacamole with diced tomato on top portion of prep fridge have an internal temperature of 48*F. PIC stated guacamole was stored on ice in unit at 11am, guacamole was relocated to rapidly cool at time of inspection. Observed cut sausage and cooked pasta above fill line of container located in top portion of prep fridge have an internal temperature of 42-46*F. Sausage and cooked pasta were in unit since 11am, PIC moved food items to bottom of prep fridge to rapidly cool. Observed multiple TCS items in drawers under grill to be above 41*F. Foods include raw ground beef (46*F), Monterey jack cheese (50*F), and raw beef steak (50-52*F). Unit measured an ambient temperature of 46*F with min/max thermometer. PIC observed unit not fully plugged into outlet, stating it had been unplugged for approximately 45 minutes. Once completely plugged in, ambient temperature of unit decreased to 38*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
