Per manager, the establishment is expecting a renovation/remodel sometime in the future. The manager was not aware of any timeline for the work to be done. If significant changes to the structure of the establishment are made (e.g. changing of plumbing, gas lines) a remodel application will need to be submitted to the department.

Observed accumulation of grease and other food debris on the side of the grill equipment. Also observed an accumulation of encrusted food debris on a significant portion of the metal sheet pans on the clean dish storage racks. In addition, observed accumulation of dust and other debris on the fan inside the reach in refrigeration unit used for French toast. The establishment shall clean the non-food contact surfaces of equipment at a frequency to prevent the accumulation of dust, grease, and other food debris. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed accumulation of food debris and equipment underneath the tables along the server line. Also observed accumulation of dirt, grease, and other food debris underneath and behind the cooking equipment. In addition, observed accumulations of dirt, dust, and other food debris along the fiberglass reinforced plastic (FRP) walls throughout the kitchen area. The establishment shall clean the physical premises at a frequency to prevent the accumulation of dirt, dust, and other food debris. Corrective Action: Correct prior to next routine inspection. 6-201.11 - Core: Floors, Walls and Ceilings-Cleanability Addl Notes: Observed multiple sections of tile flooring, including near the back door and at the chicken breading station, with degraded and exposed grout lines. The establishment shall ensure the flooring is installed and maintained to produce a smooth, easily cleanable surface. Corrective Action: Correct prior to next routine inspection.

At time of inspection, water temperature during final rinse at high-temperature mechanical dishwasher in dish pit area was only able to reach 142 degrees Fahrenheit. Please ensure final rinse temperature at high-temperature machine can attain at least 165F. Person in charge (PIC) instructed staff to manually re-wash recently washed dishes at 3-compartment sink and to wash dishes at 3-compartment sink until repairs are completed.
