Inspector's notes

Grated mozzarella cheese, garlic cheese sauce, nacho cheese sauce, beef pizza topping, and bacon pizza topping found in lower portion of prep cooler with internal temperatures of 46-50*F. The cooler was last known to have an ambient temperature below 41*F at 9:00 AM today. PIC discarded the TCS food items in the cooler. The cooler appeared to be fluctuating in temperature as it achieved an ambient temperature of 41-42*F towards the end of the inspection. Continue to monitor the cooler and ensure it is able to maintain an ambient of 41*F before storing cold held TCS food items inside it. Walk-in cooler can be used for cold holding to continue normal operations as the top rail of the cooler is below 41*F still. Cold held TCS food items must be maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
