Inspector's notes
Observed sausage links and patties being hot held on the flat top grill and in the steam-well on the buffet line ranging from 100*F to 114*F using probe thermometer, verified by person in charge (PIC). PIC stated the sausage on the flat top were placed there more than two hours prior to inspection and voluntarily discarded - see embargo form. The sausage at the buffet line were placed there 30 minutes prior to inspection and reheated the sausage to 165*F at time of inspection. Corrective Action: Corrected at time of inspection.

Employee then donned gloves and began handling clean utensils and food related items at the prep cooler in the grill area of the cafe. PIC instructed employee to discard gloves, wash hands, and clean/sanitize any contaminated utensils or equipment. PIC will retrain employee about proper handwashing, when to wash hands, and review the policy for eating, drinking, taking medication etc. The hands are particularly important in transmitting foodborne pathogens. Food employees with dirty hands and/or fingernails may contaminate the food being prepared. Therefore, any activity which may contaminate the hands must be followed by thorough handwashing in accordance with the procedures outlined in the Food Code.
