Observed ham, turkey, capicola, roast beef, chicken pastrami, bologna, salami, provolone, pepper jack, swiss with an internal temperature of 44-45*F in prep table. Items were stored in plastic containers and owner was advised to use metal containers to help retain temperature better. Prep table was holding ambient air temperature of 39-41*F in various parts. Also discussed stocking food below the fill line. PIC, stated food was in prep table for 1.5 hours prior to inspection and moved food to walk-in cooler to rapidly chill.
