Observed spinach on time as control policy sitting out with no timer or time label. According to person in charge, they do not use the timer as policy states. All items on time as control must have a label with the discard time or another method of keeping track of the discard time, such as a timer. Spinach was labeled with the discard time at time of inspection. Discussed modifying policy if labels are used instead of timers. Corrective Action: Corrected at time of inspection.
