#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cut lettuce with an internal temperature range of 49F-52F located on the main service line. Per PIC, the lettuce has been on the line for less than 2 hours prior to the inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Recommended adding the lettuce to the time control policy the establishment has. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed shredded and sliced cheeses on the hot dog make line with temperatures between 52 and 55 degrees Fahrenheit. Both containers were "double panned" which limits the units ability to keep TCS food cold. Per PIC, items had been there about 2 hours and containers were placed on ice to help cool back to 41 degrees Fahrenheit or below.
