Observed two 5 gallon containers of chicken stock, made yesterday in the walk-in cooler, with temperatures ranging from 46-50*F. Proper cooling consists of going from 135*F to 70*F in the first two hours of the cooling process, then 70*F to 41*F in the next four hours, for a total of 6 hours of cooling to prevent the growth of pathogens in the food. The PIC voluntarily discarded the stock, will utilize the ice bath method, and has ordered more ice wands for the cooling process. Correct By: Corrected At Time Of Inspection
