Inspector's notes

Observed immersion blender stored as clean with dried food debris on the food-contact surface at time of inspection. Discussed cleaning frequency with PIC. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection. 4-501.112 - Priority Foundation: Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures. Addl Notes: Observed high-temp mechanical dish machine operating at 153'F after three priming runs of the unit. Discussed high-temp dish machine requirements with PIC. PIC will discontinue use of high-temp dish machine and utilize the 3-comp sink for warewashing activities until repairs are made. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed fried white fish (118'F) inside steam table adjacent to the service window at time of inspection. Discussed proper hot holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a to-go box containing sunny-side up eggs(pasteurized) placed inside of a steam table, and directly atop Ready-to-eat(RTE) fried white fish at time of inspection. Discussed the importance of maintaining RTE food free from contamination via miscellaneous sources with PIC. All food-contact surfaces must be smooth, durable, non-absorbent, and easily cleanable. PIC removed the to-go box at time of inspection. Corrective Action: Corrected at time of inspection.

Observed there to be no hand drying paper towels at the handwashing sink located by the office. PIC supplied paper towels at time of inspection. Hand drying towels must always be available at all hand washing sinks. Residual moisture on the hands can increase the level of touch-contact associated bacterial transfer following handwashing.

Inspector's notes

Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. Chlorine test strips were available and easily accessible. There was no chlorine sanitizer solution connected to the machine. PIC called for service at time of inspection. Advised PIC to use the 3 compartment sink until dishwasher is supplied with sanitizer and tested. Chlorine sanitizer must be maintained between 50-100ppm. Corrective Action: Corrected at time of inspection.
