Inspector's notes
Observed at 5pm, rice time marked 12-4 and 6-10. Discussed how time as a control begins when food items are removed from temperature control, ie when the rice is taken out of the cooker. Rice past discard time was discarded. Rice marked 6-10 was made at 3 pm and was relabeled 3-7. Discussed with PIC, about the option of getting a food variance for rice acidification to extend the shelf life. Corrective Action: Corrected at time of inspection.

Bartender removed drain pan for sink to only be used as a handwashing sink. Discussed using a bucket for dumping so the handwash sink does not get cross contaminated. PIC was unsure if dishwasher was priming, after a cycle the concentration was still 0. PIC instructed bartender to take the dishes to the kitchen dishwasher which was between 50 and 100 ppm. PIC added more quat concentrate to the 3 compartment sink to a concentration of 300 ppm. Correct By: Corrected At Time Of Inspection
