Inspector's notes

At time of inspection, observed dish machine with a sanitizer concentration of 0ppm for chlorine. The sanitizer bucket for the machine had the wrong sanitizer attached, and PIC changed out the bucket. After priming the dish machine, with the new bucket attached, dish machine had a proper concentration range for chlorine. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection. Chlorine must have a concentration between 50-100 ppm for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed reduced oxygen packaged raw beef in a commercial vacuum bag. Per PIC, depending on the cut of beef, some of the beef is stored for over 48 hours in ROP, and some in less than 48 hours. PIC removed beef from ROP at time of inspection. PIC shall obtain a variance for this method and discontinue method until approval from the Department. A variance/HACCP must be obtained prior to conducting any specialized processes. Observed cheese sauce with internal temperatures between 60 and 74 degrees Fahrenheit. Per chef and label on the pan, cheese sauce went into the walk in refrigerator at 11:20 am. Sauce was observed at 3:40 pm. Sauce was discarded as no one could verify when temperature reached 135 degrees Fahrenheit and if it cooled from 135 to 70 degrees Fahrenheit in the two hours. Corrective Action: Corrected at time of inspection.
