Walk in cooler is still only used for alcohol storage. Walk in freezer was not on and nothing was stored inside at time of inspection. Instructed manager to reach out to the department prior to using it for food, as a remodel application may be necessary.

PIC replaced Quaternary Ammonia sanitizer with water and chlorine mixture, testing at 50ppm of Chlorine sanitizer. Discussed the importance of proper sanitizer levels and temperatures and proper monitoring of sanitizer levels and temperatures. Corrective Action: Corrected at time of inspection.

Per PIC, roast beef was prepared approximately 2 and a half hours ago. PIC unwrapped roast beef and transferred to a sheet pan to rapidly cool. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
