2nd consecutive violation. Observed red and green salsa in the salsa bar at 55*F and 57*F. Per manager they had been there since this morning and were moved to the walk in to cool. Unit was holding at 56.7*F on inspector's min/max thermometer. Unit must be 41*F or below to ensure it is able to hold TCS foods at the proper temperatures.

All foods were prepared yesterday or before. Discussed with manager labeling all ready to eat (RTE), TCS foods with a date mark of when they were prepared within 24 hours or preparation. Dates were added to foods.

Per manager, foods were placed in the walk in to cool about 30 minutes prior. Instructed manager to used approved cooling methods. Recommended using metal 200 pans on the speed rack. Sent guidance documents to manager.
