2nd consecutive violation: Observed various (green, red) salsas with internal temperatures between 52 degrees F and 53 degrees F cold holding in salsa bar cooler in the dining area. Ambient temperature of the unit was found to be 47 degrees F using a min/max thermometer. Spoke with PIC and items were placed there at 5am and have been out for longer than 4hours. Discussed with operator salsas are no longer safe for human consumption. Operator proceeded to discard salsas at time of inspection. All time/temperature control for safety (TCS) foods shall be cold held at 41*F or below. Corrective Action: Corrected at time of inspection.

Ambient temperature of the unit was found to be 52.1 degrees F using a min/max thermometer. Spoke with PIC and items were placed there 30 mins prior to inspection. Items will be placed on time as a control and will be discarded in 3.5 hours. Discussed time as a control with the PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed a container of cooked, shredded chicken and a container of cooked shrimp in a refrigeration unit under the prep table registering internal temperatures between 46°-47°F with a probing thermometer. Per staff, the food items had been in the unit since the day prior. The establishment shall cool cooked perishable food items from 135°-70° within 2 hours and from 70°-41° in an additional 4 hours. The person in charge voluntarily discarded the food items. In addition, observed deep containers of cooked beans, beef, and salsa in the walk-in refrigerator registering internal temperatures between 108°-112°F. Food items were still within proper cooling time parameters. Recommended staff divide food items into smaller containers and place the containers on ice in the walk-in to cool down within the required timeframe. At start of inspection, walk-in refrigerator was holding with ambient air temperature of 48 degrees Fahrenheit with time-and-temperature control for safety (TCS) foods measured at 47- 49F. Please ensure all refrigeration can hold cold at 41F or colder. Per manager, establishment received large delivery 30 minutes prior to arrival at establishment and 70 percent of TCS items in walk-in refrigerator were received as part of that delivery. By end of inspection, ambient air temperature of walk-in refrigerator was 43F and dropping and TCS foods were measured at 45-46F and dropping.
