Observed black organic matter accumulation along ice machine drip tray. Per person in charge (PIC), ice machine is cleaned once a week. All food-contact surfaces shall be cleaned to sight and touch. PIC instructed employee to properly sanitize ice machine drip tray at time of inspection. Corrective Action: Corrected at time of inspection.

Observed accumulation of soda machine syrup along floor behind ice machine. Physical facility shall be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Observed black organic matter growing on ramp and side wall of ice bin next to 3-compartment sink. Ice from bin is packaged and sold for food consumption. Except when dry cleaning methods are used (4-603.11), surfaces of utensils and equipment contacting food that is not TCS food shall be cleaned, In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Explained to PIC that regular cleaning of the ramp and side walls can prevent potential contamination of ice. PIC agreed to relay cleaning instructions to manager. Corrective Action: Correct prior to next routine inspection.
