Inspector's notes
Observed cooked ribs and cooked potatoes at 45*F in the tall cold holding unit near the 3 compartment sink. Ambient air temperature taken with a min/max thermometer of the unit was 47*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. This is a second consecutive repeat violation. Corrective Action: Corrected at time of inspection.

Observed an ambient air temperature of 47*F taken with a min/max thermometer in the tall cold holding unit near the 3 compartment sink. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Temporarily the PIC placed ice bags into the unit to rapidly drop the temperature. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. In person reinspection will be Friday, July 26th. Corrective Action: Correct prior to re-inspection.

Observed cold brew at 72*F in a dispenser at room temperature, brewed yesterday per PIC. A new batch of cold brew is brewing on the counter in a container made this morning per PIC around 7 am. PIC placed the new batch of cold brew into refrigeration to continue brewing. Time/temperature control for safety foods should be held at 41*F or lower to prevent the growth of pathogens. PIC voluntarily discarded the old batch of cold brew. Provided cold brew doc. in case the establishment would like to apply for a variance to brew at room temperature.
