Inspector's notes

Observed a mechanical warewasher in the kitchen with dishes inside. After running the warewasher four times, the chlorine test strips indicated 0 ppm of sanitizer present on the surface of the dishes. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Establishment has three-compartment sink that they can use to wash, rinse and sanitize food contact surfaces until repair of mechanical warewasher. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed open bottles of tomato salsa (datemarked 8/5) and basil pesto with oil and garlic (datemarked 7/23) in the main walk-in cooler. Person in Charge (PIC) stated that those were the dates that the containers were opened. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Observed an employee preparing food with two bracelets on their wrist. Inspector discussed with employee, but the employee was able to only remove one of the bracelets. One bracelet is a 'permanent bracelet' and was unable to be removed at time of inspection. Except for a plain ring such as a wedding band, while preparing food, food employees may not wear jewelry including medical information jewelry on their arms and hands. Corrective Action: Correct prior to next routine inspection.
