Inspector's notes

Observed 0 ppm chlorine sanitizer in the back of house dish machine. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. PIC called their technician while the inspector still onsite. PIC will utilize the 3 compartment sink or bar dish machine in the meantime. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection

Maintain cold TCS food at or below 41F. TCS foods in open top were within safe time parameters and were placed in ice baths to cool and cold hold. Backup TCS foods in unit below were transferred to other refrigerators. The person in charge indicated that repair of the unit would be scheduled immediately.
