Inspector's notes

Observed whole cooked chickens (internal temp 114*F) reheating in an oven near the produce walk-in cooler at 1:15 PM. The chef stated that they began reheating the whole cooked chickens at 10:30 AM. TCS food items prepared onsite and reheated for hot holding must be rapidly reheated to 165°F within 2 hours prior to hot holding. All TCS foods improperly reheated were discarded by PIC. Inspector's notes

Observed a sprayer nozzle on a hose attached to the mop sink faucet with an atmospheric vacuum breaker (AVB). Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection. Corrective Action: Corrected at time of inspection. 5-205.15 (B) - Core: System Maintained in Good Repair; Maintained Addl Notes: Observed a missing cap on the AVB valve on the mop sink faucet. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Observed grilled onions and cooked squash with temperatures of 47-52*F. Per PIC had been in the unit since 4pm. Observed an ambient air temperature of 47*F in the middle cold holding unit on the cook line with a min/max thermometer. Observed pickled onions and boiled eggs with temperatures of 45-54*F. Per PIC had been in the unit since 4pm. Observed an ambient air temperature of 45*F in the left cold holding unit on the cook line with a min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
