Observed two turkey sandwiches holding 108F. Discussed cooking and holding procedures with staff. Staff will monitor temperatures more closely when the products finish cooking to verify if a temperature of 135F or greater is reached. The sandwiches had been holding for 2 min, per employee. Employee set aside the items for donation. Corrective Action: Corrected at time of inspection.

Observed employee with gloved hands at cashier station, touching cash, then removing gloves,adding new gloves, and proceeding to prepare and touch hot dog buns and hot dogs and engage in food prep tasks. Talked to manager about handwashing policy. Manager talked and had employee immediately wash hands. Ensure that hand washing occurs going from dirty to clean tasks in the facility, even with handwashing. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed Romaine lettuce that comes in pre-washed and cut, holding 52F in the top portion of the cooler used to assemble sandwiches and pizza. Also observed a new item, "sun dried tomato spread," labeled "perishable," holding 50F. Both items come from the walk in refrigerator at 39F. The items were placed into the unit at 8am. PIC discarded the items. The unit below was reading 35F, but the top portion is holding 55F. PIC placed an ice bath under the items until further maintenance. TCS food items must be stored at 41F or below when cold holding. ***Prior to leaving establishment, the top portion of the unit was observed to be disconnected from the bottom, therefor, preventing proper cold holding temperatures. The unit is now holding 41F and below. Correct By: Corrected At Time Of Inspection
