Observed various ready to eat TCS food items in refrigerators without a date mark. Items such as opened packages of hot dogs, sauces, cooked meats, chili, and stews. PIC prepared all items and is aware of prep dates. PIC placed date marks on all containers. Discussed date marking procedures- to include if ready to eat items are placed in freezer. The preparation/cook date counts as day one of 7. If the food is placed in freezer on preparation day, it has a 6 days shelf life left when removed from freezer. 3rd consecutive violation Correct By: Corrected At Time Of Inspection
