Observed cooked eggs and cooked boba stored on the counter at room temperature. Both items were made within the past 2 hours and measured between 75-90 degrees F. Items were placed in the refrigerator to expedite cooling process. Discussed proper cooling time frames. Active cooling begins at 135 degrees F. You then have 2 hours to cool the TCS food item to 70 degrees F and an additional 4 hours to cool to 41 degrees F.

Final construction inspection walk through. Construction complete and approved.Superintendent will follow up on the items below:1). Side door is missing trim at the side, please close the gap.2). Please seal the base tile to the donut case at the underside junction.3). Please install a split escutcheon for the drain line at the front hand sink where the grout shrunk. Ideally you install split escutcheons at all drain lines.4). Increase the water flow at the front hand wash sink, there is sufficient hot water.5). Install light bulbs under the hood where missing.6). Brace the T&P valve drain line to the wall and connect the backflow valve hub drain line to it.7). In the front near the soda system, remove access foam and finish out the wall.8). See if you can close the hole around the soda line wall penetration.This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Note that fees paid up to this inspection approval did not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov.
